There's a definite chill in the air today...So what's a girl to do? Make a pot pie, darn it.
I also get the added benefit of this dish being a guaranteed husband-pleaser, and now have found a way to make these in record time!
Traditionally, my pot pie's required a myriad of steps such as making a creamed chicken sauce and adding a ton of butter and cream. Don't get me wrong, it's delicious but I can live without the extra 45 mins in the kitchen and the extra dirty pans!
Personal Pot Pies:
- Brown chicken/tofu/beef (if using), and saute your veggies, season to taste. (3-4 cups total for my personal-sized pies)
- Add 1 1/2 cups stock, and sprinkle in 2 tablespoons of flour.
- Simmer and stir until liquid thickens and portion out into greased ramekins. Top with prepared crust, brush an egg glaze on and bake until bubbly and golden (350 degrees for about 25 minutes).
Step 4: ENJOY!
