For the past week I've been craving anything with lemon in it (Lemon Pepper Chicken Burgers coming soon). I guess it could be called a "summer thing". As a kid, I ran kicking and screaming away from anything with the flavor of citrus, especially those lemon, lime and orange Skittles...ick. Nowadays I use lemon and lime in a million ways, whether for marinating (salmon, chicken, pork, tri-tip) or for these awesome Lemon Poppyseed Sour Cream Cakes.
I used light sour cream in these, but plain yogurt works just as well. The kitchen is filled with cupcakes, mini-bundts, tarts and a loaf...waiting to be drizzled in a lemon glaze and eaten. If I'm not careful this lemon obsession could turn on me...I'll have to find another jack-of-all-trades ingredient. I'll just enjoy this while it lasts.
