I was craving something fresh and tasty and *bing* this popped into my head. My first experience of really good Falafel was years ago, while visiting friends in San Francisco. Believe it or not, they lived a few houses down from the infamous Haight and Ashbury...and an amazing restaurant (a step above a street cart, really) was close by on Haight. I think we went back a couple times for their amazing Falafel, and the memory has obviously stayed with me...I seem to have a looong memory when it comes to food.
For these special Falafels, I added about a cup of Quinoa for bulk (well, their nutritional value adds even more than that). In a whole wheat pita, I topped these with sliced cucumbers and tomatoes, and a homemade tzatziki (organic plain yogurt, cucumber, garlic), and promptly devoured the entire thing.
