Roasted Reds

What do you do with a monster pepper?  You throw it on the fire and show it who's boss!  I found these 1 POUND beauties at one of my favorite places and couldn't pass them up.

Roasting peppers is fun and easy (just make sure the fan’s on and a door is open).  Who doesn't like setting things on fire??  A simple process completely transforms their flavor and they add a smokey flavor to any dish.  J and I use them in a lot of different ways…in salads, blended into hummus, topped on to baked chicken or fish.  They can also make great soups or sauces. Yum!
