No-cook summer dinners rule around this house. Tis the season for something cool and delicious, something light and that takes advantage of the summer months.
Here is one of our favorites, Zucchini Noodles with Sesame Peanut Sauce.
It's quite the current trend to make vegetable noodles, either with a Spiralizer (this is the best one!) or with a simple Julienne Peeler, as shown here. This julienne peeler was a mere $3.49 at my local kitchen store and has given us so many fun updates to recipes. My 3 year old thinks it's so fun to eat carrot noodles, another bonus!
This summer dinner consists of fresh, raw zucchini noodles, sliced baby bell peppers, and my home made Sesame Peanut sauce. YUM.
Zucchini Noodles with Sesame Peanut Sauce
Serves 4-6 for the dish shown above
3-4 medium zucchinis, "noodled"
1 carrot, "noodled"
a handful of sliced baby bell peppers
3 green onions, thinly sliced
2 tablespoons of sesame seeds
1/2 c natural peanut butter (smooth or chunky)
1/4 c ketchup
2 tablespoons soy sauce
1 tablespoon toasted sesame oil
2 cloves of garlic, finely grated
Sea salt and ground pepper, to taste
Combine and whisk sauce ingredients, from the peanut butter down to the garlic. Add salt and pepper if desired. This sauce can be used immediately or simmered in a small saucepan for a few minutes. I prefer to simmer the ingredients to allow the flavors to enhance. Simply spoon sauce over vegetables, top with sliced green onion and sprinkle with sesame seeds. Enjoy!
